Why isn’t the air temperature inside my Proofer Pro the same as the setting?
The device maintains dough temperature rather than ambient air temperature. Using a thermometer to measure interior air won’t accurately reflect food temperature.
Should I use the water tray when proofing dough?
Always maintain the water tray. When heating, add a small amount of water – start with 1 tablespoon (15 ml), and add more only if needed – to increase humidity. When cooling, do not add water; the tray will naturally collect condensation.
I bought a Proofer Pro in the U.S., can I use it internationally?
Yes. The Proofer Pro is compatible with 120–240V and 50/60Hz, so it can be used worldwide. You may need a plug adapter to match your country’s outlet type.
What features can I control with the app?

Will any half sheet pan fit the Proofer Pro?
No. Pan dimensions vary by manufacturer. Pans with deeper or differently-shaped rims may not fit properly. Only approved pans are guaranteed to work correctly.
How do I clean the Proofer Pro?
Unplug and let the unit cool before cleaning. Wipe interior and exterior surfaces with a damp cloth, using mild soap if needed. Hand-wash trays and pans; never use a dishwasher. Leave the door open until fully dry after each use. For mold, use a food-safe disinfectant, dry completely, then run the unit at maximum temperature for one hour with no water inside and the door closed; leave the door open for at least one hour before the next use.
